Eggplant Lasagna Rolls

Meat lovers or vegetarians both will like to have this cheering lasagna rolls. Here we replace pasta with very flat pieces of eggplant to decrease the level of carbohydrates. If you first pre-roast the eggplant, it will help in producing the delicious flavour and soften the pieces for rolling simply and easily.

Ingredients

  • 3 large eggplants
  • 2 cups crushed tomatoes
  • 3 tablespoons extra-virgin olive oil
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon ground pepper
  • 3 teaspoons minced garlic, divided
  • 1/2 cup chopped fresh basil, divided
  • 2 1/2 cups part-skim ricotta cheese
  • 1 cup frozen chopped spinach, thawed
  • 1/4 cup grated Parmesan cheese
  • 1 cup shredded part-skim mozzarella cheese

  • Preheat oven to 425 degrees F. And place the rack in the middle of the oven. Coat the baking sheet with cooking oil or spray.
  • Cut the slices of eggplant in lengthwise approx 1/4 thick pieces and discard small or broken part. Separate about 24 slices. Sprinkle salt on the slices and keep them for 15 minutes.
  • When the slices got dry, apply oil with the brush on both sides. Then position on the ready pan. Then keep in oven for roasting until they become soft and start changing colour to brown. When they become soft, keep aside, and let them cool.
  • Now add tomatoes, 1/4 cup basil, 2 teaspoon garlic and salt according to the taste in a large bowl. Separate half cup of mixture in a broiler-safe baking pan. Add spinach (without water), pepper, remaining garlic, parmesan, ricotta in a bowl.
  • When the eggplant slices got cool enough to hold, spread a normal teaspoon of parmesan foodstuff on each slice. Now roll up the slices from the small end and place the rolls in a baking pan.
  • Now start baking the rolls on the middle rack up to 40 to 45 minutes. After baking, top the rolls with mozzarella cheese and keep in a broiler up to 2 minutes when cheese got melt. And garnish with remaining basil and serve.

Serve with tomato sauce or with mayonnaise. It will add flavour and make this dish delicious.
